[Make] Homemade Marshmallows

After years of wanting to try my hand at homemade marshmallows, I finally made some this weekend. I don't know why I waited so long! They were pretty easy to make and the recipe that I used turned out perfectly. They taste so much better than the store bought stuff too.


If the marshmallow shamrock looks ginormous... that's because it is. :)

I used the homemade marshmallow recipe from epicurious. The only thing i did differently was add food coloring to the mixture. I added the food coloring at the same time as the vanilla. By the way, the marshmallow takes on the flavor of the vanilla extract, so be sure to use a good one.

Now I have one child who doesn't care for marshmallows (it's a texture thing), so I topped his hot chocolate with a cool whip shamrock.


I saw this over at say yes to hoboken for Valentine's Day. It's super easy-- thaw cool whip, cover small pan with parchment paper, add thawed whip, drop in some color, swirl color, refreeze and cut out shapes. I didn't add additional flavor, but that's always an option too.

It's still chilly out there so I'm going to enjoy a cup of cocoa. Have a nice Monday!
