[Eat] Pick-Me-Up Protein Shake

On hot, hot days like today I usually feel sluggish and don't feel like eating.  And yet I'm hungry and need energy... Protein shake to the rescue!  Frothy, creamy and fruity, it's the perfect hot day pick-me-up.

My "secret" ingredient for a creamy protein shake without using cow's milk?

Coconut Milk!

Coconut milk is easier to digest than cow's milk and also has high levels of omega fatty acids-- which the body turns into energy instead of storing as fat.  I've heard it's also good for the brain... which I need.  But basically I think it just tastes delicious!

Creamy Coconut Milk Protein Shake

1 cup coconut milk
1 frozen banana
1 cup strawberries (or other fruit)
2 scoops protein powder
hand full of ice

whey protein powder (if you're lactose intolerant, soy protein may be an alternative) & vanilla-flavored coconut milk from Trader Joes

blend it up...

and pour it in!

After the kids and I have had our fill, I freeze the rest into popsicles.  It makes a great treat for another hot day.

We have 6 more days of summer left.  Then school start... dah, dah, dah... So much to do before then!!!  Have a great rest of the week!
